The Art of Reinventing Familiar Flavours

A closer look at how we reinterpret beloved classics while preserving the comfort and familiarity that make them memorable.

Some flavours stay with us for a lifetime. They remind us of family dinners, long afternoons shared with friends or a place we once visited and never quite forgot. These memories become part of how we experience food. That's why, when we create something new, we rarely begin with the intention of replacing tradition. Instead, we begin by understanding what made those dishes meaningful in the first place. Only then do we ask how they might evolve while preserving the warmth and familiarity that made us love them.


For us, reinterpretation is less about changing a recipe and more about changing perspective. It means looking beyond established techniques, questioning familiar combinations and discovering subtle opportunities that may have been overlooked. Sometimes the answer is found in a seasonal ingredient, sometimes in a different preparation or simply in the decision to remove rather than add. The smallest changes often have the greatest impact.

Every new dish begins with something recognisable. A classic pasta, a traditional sauce or an ingredient deeply rooted in Mediterranean cooking. Familiarity gives us a place to start, but it never defines where the journey ends. We spend time exploring different interpretations, testing ideas and refining each detail until every element feels intentional. The goal is never to create complexity for its own sake, but to reveal something new within something already loved.

This process demands patience more than inspiration. Many ideas disappear long before they reach the menu, while others quietly evolve over weeks of tasting and discussion. We often find ourselves returning to the simplest version of an idea, removing unnecessary elements until only the essence remains. The result feels effortless, although the path towards it rarely is.

There is a certain responsibility that comes with reinterpreting classics. These dishes carry memories, traditions and expectations that deserve to be treated with care. Rather than competing with those traditions, we see ourselves as continuing an ongoing conversation. Every adjustment, every new ingredient and every refined technique is made with respect for the original spirit of the dish.

At the same time, we believe traditions remain meaningful because they continue to evolve. Every generation contributes its own perspective, shaped by new ingredients, different cultures and changing ways of gathering around the table. Innovation and tradition are often presented as opposites, yet we see them as partners. One provides the foundation, while the other encourages us to keep asking questions.

Perhaps that's why some of our favourite dishes feel immediately familiar while offering something guests weren't expecting. They don't rely on surprise alone. Instead, they invite a second look, a slower conversation and a deeper appreciation for ingredients that have always been there.
