Every ingredient has a story long before it reaches our kitchen. It begins in changing weather, fertile soil and the hands of the people who dedicate themselves to growing, harvesting and producing with care. We believe that seasonality is about far more than availability. It connects us to a particular moment in time, reminding us that every ingredient has its own rhythm, its own character and its own brief opportunity to be experienced at its very best. Rather than working against nature, we prefer to work alongside it, allowing each season to quietly shape the way we cook.

Every season offers a different perspective. Spring introduces delicate herbs and vibrant greens, summer brings tomatoes bursting with sweetness, while autumn fills the kitchen with earthy flavours and deeper aromas. Winter encourages slower cooking, comforting textures and ingredients that reward patience. Together, these natural changes create a rhythm that no calendar or recipe could ever fully replace.
Following the seasons also means accepting unpredictability. No harvest is exactly the same as the last, and no ingredient arrives with identical flavour, colour or texture. Rather than seeing this as a limitation, we see it as one of the greatest sources of creativity. It encourages us to adapt, observe and discover new possibilities instead of repeating the same ideas throughout the year.
The people behind these ingredients are equally important. Farmers, fishermen, growers and artisans all contribute their own knowledge, experience and dedication long before a dish reaches the table. Every ingredient carries a history of careful work, and we believe that deserves the same respect in the kitchen as it received in the field.
