Curiosity Is the Most Important Ingredient

Every memorable dish begins long before the first ingredient reaches the kitchen. It begins with a question. A quiet moment of curiosity that encourages us to look beyond the obvious and reconsider something familiar. We believe that creativity isn't about constantly searching for the extraordinary. More often, it's about paying closer attention to the ordinary.

Curiosity influences every part of our work. It shapes the conversations we have as a team, the ingredients we choose to work with and the countless small decisions that eventually become part of a finished dish. Sometimes the answer reveals itself immediately. More often, it appears only after many attempts, adjustments and conversations around the kitchen table.

We rarely begin with the intention of creating something completely new. Instead, we begin with something we already know—a familiar ingredient, a traditional recipe or a flavour that carries memories. From there, we explore. We simplify. We refine. We remove what isn't necessary until only the essence remains.

Some ideas come from the changing seasons. Others arrive through travel, architecture, books, music or a conversation shared over dinner. Inspiration rarely follows a predictable path, and that's exactly what makes the creative process so rewarding. The more open we remain to the world around us, the more opportunities we discover within it.

Not every experiment succeeds, and we wouldn't want it any other way. Some of our favourite dishes are the result of ideas that initially failed. Every unsuccessful attempt teaches us something about flavour, balance or restraint. Every revision brings us a little closer to something worth sharing.

For us, cooking is an ongoing dialogue between discovery and craftsmanship. Curiosity opens the door, but patience, repetition and care give every idea its final shape. The dishes we serve are simply the visible result of a much longer process—one built on observation, collaboration and an endless desire to keep learning.

Perhaps that's why curiosity remains our most important ingredient. Not because it guarantees better food, but because it reminds us that there's always another perspective to discover, another question to ask and another story waiting to be told.
