The Perfect Pasta
From selecting ingredients to mastering texture, we share the principles behind one of Italy's most beloved dishes.

Pasta
250 g fresh tagliolini or linguine
2 litres water
20 g sea salt
Finishing
Extra virgin olive oil
Unsalted butter (optional)
Freshly grated Parmigiano Reggiano
Fresh herbs (parsley or basil)
Freshly cracked black pepper
Step — Start with Well-Seasoned Water
Bring a large pot of water to a rolling boil and season generously with sea salt. The water should be well seasoned, as it provides the foundation for the pasta's flavour from the very beginning.Step — Cook Until Al Dente
Add the pasta and cook according to the recommended time, tasting regularly during the final minute. The ideal texture should be tender while still offering a slight bite at the centre. Before draining, reserve a cup of the cooking water.Step — Finish in the Sauce
Rather than serving the pasta directly from the pot, transfer it into the prepared sauce while it's still slightly undercooked. Add a splash of the reserved pasta water and gently toss until the sauce becomes silky and evenly coats every strand.Step — Balance the Flavours
Finish the dish with freshly grated Parmigiano Reggiano, a drizzle of extra virgin olive oil and, if desired, a small knob of butter for added richness. Adjust the seasoning with freshly cracked black pepper and a touch of sea salt only if needed.Step — Serve Immediately
Pasta is at its best the moment it leaves the pan. Plate immediately, garnish with fresh herbs or additional Parmesan and enjoy while the sauce is perfectly glossy and the pasta retains its ideal texture.
Chefs Note Perfect pasta isn't defined by complexity but by balance. Great ingredients, properly seasoned water, careful timing and finishing the pasta in the sauce are small details that make all the difference. When each element is treated with care, simplicity becomes the greatest luxury.
